Ingredients

Scale

4 cups fresh baby spinach, chopped and dried

8 oz Greek feta cheese, crumbled

12 sheets phyllo dough, thawed

1/2 cup extra virgin olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon black pepper

1/4 teaspoon sea salt

2 tablespoons fresh dill, chopped

1 egg, beaten

2 tablespoons sesame seeds (optional)

Instructions

1. Preheat oven to 375°F and line two baking sheets with parchment paper.

2. Thoroughly wash and dry spinach, then chop into small pieces.

3. In a large bowl, combine spinach, feta, garlic, oregano, dill, pepper, and salt. Mix well and let rest 10 minutes.

4. Place one phyllo sheet on work surface and brush with olive oil. Top with another sheet and brush again.

5. Cut layered phyllo into 6 equal rectangles.

6. Place 1 tablespoon filling at short end of each rectangle.

7. Fold phyllo over filling to form triangle, then continue folding like a flag until you reach the end.

8. Place triangles seam-side down on baking sheets, spacing 1 inch apart.

9. Brush each triangle with beaten egg and sprinkle with sesame seeds.

10. Bake 18-22 minutes until deep golden brown and crispy.

11. Cool on baking sheet for 3-4 minutes, then transfer to wire rack.

12. Serve warm or at room temperature with tzatziki or hummus.

Notes

Keep unused phyllo covered with damp towel to prevent drying.

Thoroughly dry spinach to prevent soggy crisps.

Freeze unbaked crisps for up to 2 months. Bake from frozen, adding 5 minutes to cooking time.

Store baked crisps in airtight container for up to 2 days. Reheat in 350°F oven for 5-7 minutes.

Use block feta in brine rather than pre-crumbled for best flavor and texture.
