- 2 salmon fillets
- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Heat the olive oil in a skillet over medium heat. Season the salmon fillets with salt and pepper. Add the fillets to the skillet and sear for about 4-5 minutes on each side until cooked through. Remove the fillets from the skillet and set aside.
- Add the minced garlic to the same skillet and cook until fragrant, stirring constantly.
- Pour in the orzo and stir for about 1 minute to coat the pasta in flavors.
- Bring the vegetable broth to a boil, then reduce the heat and let it simmer for about 10 minutes, or until the orzo is cooked through and the liquid is absorbed.
- Place the salmon back into the skillet with the orzo. Garnish with fresh parsley before serving.
Notes
Serve with a crisp green salad or roasted vegetables. Lemon wedges add extra zest.
