Description

Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Heat the olive oil in a skillet over medium heat. Season the salmon fillets with salt and pepper. Add the fillets to the skillet and sear for about 4-5 minutes on each side until cooked through. Remove the fillets from the skillet and set aside.
  2. Add the minced garlic to the same skillet and cook until fragrant, stirring constantly.
  3. Pour in the orzo and stir for about 1 minute to coat the pasta in flavors.
  4. Bring the vegetable broth to a boil, then reduce the heat and let it simmer for about 10 minutes, or until the orzo is cooked through and the liquid is absorbed.
  5. Place the salmon back into the skillet with the orzo. Garnish with fresh parsley before serving.

Notes

Serve with a crisp green salad or roasted vegetables. Lemon wedges add extra zest.
