Delicious quesadillas filled with spinach, feta, mozzarella, and red onion, perfect for a quick meal or snack.

- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper. Mix well to combine all the flavors.
- Lay one tortilla flat on a clean surface. Place one-fourth of the filling mixture on one half of the tortilla. Fold the other half over to cover the filling.
- Heat a non-stick skillet over medium heat and add the olive oil. Ensure it coats the bottom of the skillet evenly.
- Place the filled tortilla in the skillet. Cook for about 3-4 minutes until the bottom turns golden brown and crispy.
- Flip the quesadilla carefully and cook for another 3-4 minutes until both sides are nicely golden and crisp.
- Remove from heat, slice into wedges, and serve warm.
Notes
Serve with Greek yogurt or sour cream. Pairs well with a fresh salad or homemade salsa.
