Mediterranean Quesadillas

Description

Delicious quesadillas filled with spinach, feta, mozzarella, and red onion, perfect for a quick meal or snack.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper. Mix well to combine all the flavors.
  2. Lay one tortilla flat on a clean surface. Place one-fourth of the filling mixture on one half of the tortilla. Fold the other half over to cover the filling.
  3. Heat a non-stick skillet over medium heat and add the olive oil. Ensure it coats the bottom of the skillet evenly.
  4. Place the filled tortilla in the skillet. Cook for about 3-4 minutes until the bottom turns golden brown and crispy.
  5. Flip the quesadilla carefully and cook for another 3-4 minutes until both sides are nicely golden and crisp.
  6. Remove from heat, slice into wedges, and serve warm.

Notes

Serve with Greek yogurt or sour cream. Pairs well with a fresh salad or homemade salsa.
