Ingredients

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions, drain and set aside.
  3. Heat olive oil in a pan, add zucchini, bell pepper, and mushrooms. Cook until softened.
  4. Add spinach and cook until wilted. Season with oregano, salt, and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer three lasagna noodles over the sauce, followed by half of the ricotta, half of the vegetable mixture, and a third of the mozzarella.
  7. Repeat the layering process, ending with noodles and a final layer of marinara and mozzarella.
  8. Sprinkle Parmesan cheese on top.
  9. Bake for 30 minutes, then let it rest for 10 minutes before slicing.
