Description
Soft, chewy cookies bursting with sweet maraschino cherries and melty chocolate chips a fun twist on a classic chocolate chip cookie with a hint of cherry flavor!
Ingredients
2 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 tsp vanilla extract
1/2 tsp almond extract
1/2 cup chopped maraschino cherries, drained well
1 1/2 cups semi-sweet chocolate chips
Optional: red gel food coloring for extra pink hue
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a bowl, whisk together flour, baking soda, and salt.
3. In another large bowl, beat butter, granulated sugar, and brown sugar until creamy.
4. Add egg, vanilla, and almond extract; mix until combined.
5. Gradually add the dry ingredients and mix until just incorporated.
6. Fold in chopped maraschino cherries and chocolate chips.
7. If desired, add a drop or two of red food coloring for a rosy hue.
8. Scoop 1 1/2 tablespoon portions of dough onto prepared baking sheets.
9. Bake 9–11 minutes, until edges are lightly golden and centers are soft.
10. Cool on baking sheet for 5 minutes before transferring to a wire rack.
Notes
Drain cherries thoroughly to prevent excess moisture in cookies.
You can substitute white chocolate chips for a sweeter variation.
Store cookies in an airtight container for up to 5 days or freeze up to 3 months.
