Description

Tender roasted sweet potatoes glazed with maple syrup, butter, and warm spices, then topped with toasted walnuts for a sweet and nutty holiday side dish.


Ingredients

3 medium sweet potatoes, peeled and cubed (about 2 lbs)

2 tbsp olive oil

2 tbsp melted butter

3 tbsp pure maple syrup

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

Salt and black pepper, to taste

1/2 cup chopped walnuts

Optional garnish: fresh thyme or rosemary


Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. In a large bowl, toss sweet potato cubes with olive oil, melted butter, maple syrup, cinnamon, nutmeg, salt, and pepper.

3. Spread evenly on the baking sheet in a single layer.

4. Roast for 25 minutes, then sprinkle with chopped walnuts.

5. Return to oven and roast another 10–15 minutes, until potatoes are tender and caramelized.

6. Garnish with fresh herbs and serve warm.

Notes

You can substitute pecans for walnuts if preferred.

Add a sprinkle of brown sugar before baking for extra sweetness.
