Description
Golden and caramelized Maple Roasted Parsnips sweet, nutty, and perfectly tender with a hint of maple and thyme. An easy and elegant side dish that pairs beautifully with roasted meats or holiday mains.
Ingredients
1 1/2 lbs parsnips, peeled and cut into batons or wedges
2 tbsp olive oil
2 tbsp pure maple syrup
1 tsp fresh thyme leaves (or 1/2 tsp dried)
Salt and pepper, to taste
Optional garnish: chopped parsley or toasted pecans
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a large bowl, toss parsnips with olive oil, maple syrup, thyme, salt, and pepper until evenly coated.
3. Spread in a single layer on the prepared baking sheet.
4. Roast for 25–30 minutes, turning halfway through, until golden brown and caramelized.
5. Transfer to a serving platter and drizzle with a touch more maple syrup if desired.
6. Garnish with parsley or toasted pecans before serving.
Notes
For extra crispiness, avoid overcrowding the baking pan.
Add a splash of balsamic vinegar or a sprinkle of chili flakes for flavor variation.
