Maple Dijon Roasted Vegetables a colorful medley of tender root vegetables tossed in a tangy maple mustard glaze. Sweet, savory, and perfectly caramelized, this easy dish adds warmth and flavor to any meal.
Ingredients
2 cups carrots, cut into 1-inch pieces
2 cups parsnips, cut into 1-inch pieces
1 cup Brussels sprouts, halved
1 red onion, cut into wedges
2 tbsp olive oil
2 tbsp pure maple syrup
1 tbsp Dijon mustard
1 tsp whole grain mustard (optional)
1 tsp fresh thyme leaves (or 1/2 tsp dried)
Salt and pepper, to taste
Instructions
1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
2. In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, whole grain mustard, thyme, salt, and pepper.
3. Place the vegetables in a large bowl and toss with the maple-Dijon mixture until evenly coated.
4. Spread the vegetables in a single layer on the prepared baking sheet.
5. Roast for 25–30 minutes, stirring halfway through, until vegetables are tender and golden brown.
6. Transfer to a serving dish, drizzle with a little extra maple syrup if desired, and serve warm.
Notes
Add sweet potatoes, beets, or cauliflower for more variety.
For extra crunch, top with toasted pecans or walnuts before serving.
This recipe doubles easily and makes a perfect side for Thanksgiving, chicken, or pork roasts.
