Description
Guy Fieri’s Macaroni Salad is a creamy, zesty pasta salad loaded with fresh veggies and bold dressing perfect for BBQs or meal prep.
Ingredients
1 lb elbow macaroni
1 cup mayonnaise
1/4 cup white vinegar
2 tbsp yellow mustard
2 tbsp sugar
1 red bell pepper, diced
1 cup celery, diced
1 cup shredded carrots
1 tsp salt
1/2 tsp black pepper
Instructions
1. Cook macaroni in salted water until al dente.
2. Drain and rinse under cold water.
3. In a bowl, whisk mayo, vinegar, mustard, sugar, salt, and pepper.
4. Add pasta, bell pepper, celery, and carrots to a large bowl.
5. Pour dressing over pasta and vegetables.
6. Toss until evenly coated.
7. Chill for at least 1 hour before serving.
Notes
For extra flavor, add paprika or chopped parsley before serving.
Store in an airtight container in the fridge for up to 3 days.
Stir in more mayo if salad seems dry after chilling.
