Description

A rich and tender Slow-Braised Beef Roast cooked low and slow in a savory wine and herb sauce  yielding melt-in-your-mouth meat with deep, comforting flavors perfect for a cozy dinner or special occasion.


Ingredients

Scale

3 to 4 lb beef chuck roast

2 tbsp olive oil

1 large onion, chopped

3 garlic cloves, minced

3 carrots, cut into chunks

2 celery stalks, chopped

1 cup red wine (or beef broth)

2 cups beef broth

2 tbsp tomato paste

2 tbsp flour

2 sprigs fresh rosemary

2 sprigs thyme

2 bay leaves

Salt and pepper, to taste

2 tbsp butter (optional, for richness)


Instructions

1. Preheat oven to 325°F (160°C).

2. Pat the beef roast dry with paper towels and season generously with salt and pepper.

3. Heat olive oil in a large Dutch oven over medium-high heat.

4. Sear the roast on all sides until well-browned, about 3–4 minutes per side. Remove and set aside.

5. In the same pot, add onion, carrots, and celery. Sauté for 5 minutes until softened.

6. Add garlic and tomato paste, stirring for 1 minute.

7. Sprinkle in flour and cook for another minute to thicken.

8. Pour in red wine, scraping up any browned bits from the bottom of the pot.

9. Add beef broth, rosemary, thyme, and bay leaves, then return the roast to the pot.

10. Bring to a simmer, cover tightly, and transfer to the oven.

11. Braise for 3 to 3 1/2 hours, or until the beef is fork-tender and easily shredded.

12. Remove herbs and bay leaves. Stir in butter if desired for a silky finish.

13. Serve with mashed potatoes, roasted vegetables, or crusty bread.

Notes

For deeper flavor, marinate the roast overnight in red wine, herbs, and garlic.

This dish can also be made in a slow cooker on low for 8 hours.

Leftovers taste even better the next day — perfect for sandwiches or stews.
