Description

Ingredients

  • 200g Lotus Biscoff cookies
  • 100g unsalted butter, melted
  • 400g cream cheese, softened
  • 100g sugar
  • 200ml heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp Lotus Biscoff spread

Instructions

  1. Crush the Lotus Biscoff cookies into fine crumbs, then mix with melted butter.
  2. Press the crumb mixture firmly into the bottom of a round dish.
  3. Beat together softened cream cheese and sugar until smooth.
  4. Add vanilla extract and mix until combined.
  5. Whip the heavy cream in another bowl until soft peaks form.
  6. Fold the whipped cream into the cream cheese mixture gently.
  7. Mix in the Lotus Biscoff spread until well combined.
  8. Pour the cheesecake filling over the cookie base and smooth the top.
  9. Cover the dish and refrigerate for at least 4 hours or overnight.
  10. Slice and serve, optionally garnished with crushed cookies.
