- 200g Lotus Biscoff cookies
- 100g unsalted butter, melted
- 400g cream cheese, softened
- 100g sugar
- 200ml heavy cream
- 1 tsp vanilla extract
- 2 tbsp Lotus Biscoff spread
Instructions
- Crush the Lotus Biscoff cookies into fine crumbs, then mix with melted butter.
- Press the crumb mixture firmly into the bottom of a round dish.
- Beat together softened cream cheese and sugar until smooth.
- Add vanilla extract and mix until combined.
- Whip the heavy cream in another bowl until soft peaks form.
- Fold the whipped cream into the cream cheese mixture gently.
- Mix in the Lotus Biscoff spread until well combined.
- Pour the cheesecake filling over the cookie base and smooth the top.
- Cover the dish and refrigerate for at least 4 hours or overnight.
- Slice and serve, optionally garnished with crushed cookies.
