Ingredients

  • 1 tbsp Milk
  • Pinch of Salt
  • 1/2 tsp Chili Flakes
  • 23 tbsp Shredded Cheese
  • 34 Sliced Mushrooms
  • Handful of Baby Spinach
  • 1/2 Bell Pepper, chopped
  • 1/4 tsp Black Pepper
  • Red Chili Powder, to taste
  • Paprika, to taste
  • Salt, to taste
  • 12 tbsp Olive Oil

Instructions

  1. Whisk it up: In a bowl, whisk together 1-2 eggs, 1 tbsp milk, a pinch of salt, and 1/2 tsp chili flakes until everything is well combined. Aim for a nice frothy texture!
  2. Sauté the mushrooms: Heat 1 tbsp of olive oil in a pan over medium heat. Add the sliced mushrooms and stir-fry them until they change color and become tender.
  3. Add the veggies: Toss in the handful of baby spinach, chopped bell pepper, and your preferred seasonings like black pepper, red chili powder, paprika, and a touch more salt. Stir-fry for about 1-2 minutes, allowing it all to soften and become fragrant, then set the mixture aside.
  4. Cook the eggs: In the same pan, add another tbsp of olive oil. Pour in your egg mixture and cook it until the edges start to set. You’ll want to keep an eye on it to avoid overcooking.
  5. Stuff and fold: Once the edges look good, take the sautéed vegetables and shredded cheese and place them on one half of the omelette. Gently fold the other half over.
  6. Finish cooking: Let it cook for another minute or two until the cheese melts and the omelette is cooked through. Serve it hot and watch your loved ones dig in!
