  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 avocado, diced
  • 1 cup lettuce, shredded
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (optional)
  • Sour cream (optional)
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper, and spread them out evenly on a baking sheet.
  3. Roast the potatoes in the oven for about 25-30 minutes or until they turn crispy and golden.
  4. Meanwhile, heat a skillet over medium heat and brown the ground meat. As it cooks, add the taco seasoning to infuse it with flavor. Continue to cook until the meat is fully done.
  5. In a large bowl, combine the roasted potatoes, sautéed meat, black beans, corn, diced avocado, shredded lettuce, and diced tomatoes. Gently mix everything together.
