- 4 medium potatoes, diced
- 1 lb ground beef or turkey
- 1 tablespoon taco seasoning
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 avocado, diced
- 1 cup lettuce, shredded
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (optional)
- Sour cream (optional)
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the diced potatoes with olive oil, salt, and pepper, and spread them out evenly on a baking sheet.
- Roast the potatoes in the oven for about 25-30 minutes or until they turn crispy and golden.
- Meanwhile, heat a skillet over medium heat and brown the ground meat. As it cooks, add the taco seasoning to infuse it with flavor. Continue to cook until the meat is fully done.
- In a large bowl, combine the roasted potatoes, sautéed meat, black beans, corn, diced avocado, shredded lettuce, and diced tomatoes. Gently mix everything together.
- Top the bowl with shredded cheese and a dollop of sour cream if desired.
