Ingredients
4 large russet potatoes
1 lb ground beef
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup green onions, chopped
Instructions
1. Preheat oven to 400°F (200°C).
2. Scrub and dry potatoes, rub with oil and salt.
3. Bake for 50–60 minutes until fork-tender.
4. Meanwhile, cook beef in skillet with oil until browned.
5. Season with garlic, onion powder, salt, and pepper.
6. Slice potatoes open, fluff with fork.
7. Top with cooked beef, cheese, sour cream, and green onions.
8. Serve hot and enjoy.
Notes
You can swap ground beef with shredded chicken or turkey.
