A quick and delicious breakfast or snack featuring smooth hummus and creamy avocado topped with feta and pistachios.
Ingredients

- 2 ripe avocados
- 1 cup hummus
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped pistachios
- 1/2 cup cherry tomatoes, halved
- 1/4 small red onion, thinly sliced
- 4 slices of bread (your choice)
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Toast the bread slices to your desired level of crispness.
- While the bread is toasting, mash the ripe avocados in a bowl and season with salt and pepper.
- Spread a layer of hummus on each piece of toasted bread.
- Add a generous portion of the mashed avocado on top of the hummus.
- Sprinkle crumbled feta cheese, chopped pistachios, halved cherry tomatoes, and sliced red onion over the avocado.
- Garnish with fresh herbs if desired and serve immediately as a breakfast or snack.
Notes
Store leftovers separately to keep ingredients fresh. Mash avocado can brown quickly; press plastic wrap against surface before sealing.
