Ingredients

- 1 cup almond flour
- 1/4 cup poppy seeds
- 1/2 cup protein powder (vanilla or unflavored)
- 1/4 cup honey or maple syrup
- 1/4 cup lemon juice
- Zest of 1 lemon
- 1/4 teaspoon salt
- 2 tablespoons coconut oil (melted)
Instructions
- Combine almond flour, poppy seeds, protein powder, and salt in a large bowl.
- Mix honey (or maple syrup), lemon juice, lemon zest, and melted coconut oil in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Roll the mixture into small balls, about the size of a tablespoon, and place them on a lined baking sheet.
- Refrigerate the balls for at least 30 minutes to allow them to set.

Notes
Refrigerate in an airtight container, and they’ll last for about five days. They can also be frozen for up to three months.
