Ingredients

  • 4 chicken breasts
  • 1 cup pecorino cheese, grated
  • 1 cup breadcrumbs
  • 2 lemons (zest and juice)
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together the grated pecorino cheese, breadcrumbs, lemon zest, salt, and pepper.
  3. Coat each chicken breast in fresh lemon juice and dredge in the pecorino mixture, pressing it onto the chicken.
  4. Heat olive oil in a skillet over medium heat and sear the chicken on both sides until golden brown, about 3-4 minutes per side.
  5. Transfer the seared chicken to a baking dish.
  6. In the same skillet, pour in the heavy cream and remaining lemon juice, stirring to combine.
  7. Pour the cream mixture over the chicken in the baking dish.
  8. Bake for 20-25 minutes or until the chicken is cooked through (165°F or 74°C in the thickest part).
  9. Garnish with fresh parsley before serving.

Notes

Use fresh lemons for the best flavor and let the chicken rest for a few minutes after baking to retain juices.
