- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- Zest and juice of 1 lemon
- 1/2 tsp Italian seasoning
- 3 cloves garlic, minced
- 4 tbsp unsalted butter, divided
- 1 tbsp olive oil
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 12 oz linguine
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Cook the linguine according to package instructions for al dente. Reserve 1/2 cup of pasta water for later use, then drain and set the pasta aside.
- Prepare the chicken: Season the chicken pieces with salt, pepper, and Italian seasoning. Heat 2 tablespoons of butter along with the olive oil in a large skillet over medium-high heat. Once the skillet is hot, add the chicken. Cook it until it turns golden brown and is cooked through, about 5-7 minutes. After that, remove the chicken from the skillet and set it aside.
- Make the sauce: In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté it until fragrant, about 1 minute. Then stir in the chicken broth, heavy cream, lemon zest, and lemon juice. Bring the mixture to a gentle simmer, then add the grated Parmesan cheese. Keep stirring until the cheese melts and the sauce thickens to your liking.
- Combine everything: Toss the cooked linguine into the skillet, making sure to coat the pasta well with the lemon-garlic sauce. If the sauce feels too thick, add some of the reserved pasta water to loosen it up. Return the cooked chicken to the skillet, mixing until the chicken and pasta get well integrated.
- Serve: Garnish your delicious dish with fresh parsley and extra Parmesan if desired. Serve immediately and enjoy the vibrant flavors!
Notes
Store leftovers in an airtight container in the fridge for about 3-4 days or freeze for up to 2 months. Reheat with a splash of broth or cream for best consistency.
