Description
This Lemon Feta Potato Dish is bright, tangy, creamy, and perfectly seasoned. Roasted baby potatoes are tossed with lemon, herbs, and crumbled feta for an irresistible Mediterranean-style side dish.
Ingredients
1.5 lbs baby potatoes, halved
3 tbsp olive oil
1 tbsp lemon juice
1 tsp lemon zest
2 garlic cloves, minced
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1/3 cup crumbled feta cheese
Fresh parsley or dill for garnish
Extra lemon wedges for serving
Instructions
1. Preheat oven to 425°F (220°C).
2. Toss halved potatoes with olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
3. Spread potatoes on a baking sheet in an even layer.
4. Roast for 25–30 minutes, flipping halfway, until golden and tender.
5. Transfer potatoes to a serving bowl and sprinkle with crumbled feta.
6. Garnish with parsley or dill and add extra lemon if desired.
7. Serve warm as a side dish for chicken, fish, or Mediterranean meals.
Notes
Use smoked paprika for an extra flavor layer.
Replace feta with goat cheese for a creamier finish.
Yukon gold potatoes work well if baby potatoes aren’t available.
Add olives or cherry tomatoes for a Mediterranean bowl-style side.
