Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt until well mixed.
- In another bowl, cream the softened butter and granulated sugar until light and fluffy—this will take about 2-3 minutes.
- Beat in the egg, fresh lemon juice, and lemon zest until the mixture is well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Scoop out tablespoon-sized amounts of dough and roll them into balls.
- Roll each ball in powdered sugar until they’re fully coated.
- Place the cookies on the prepared baking sheet, leaving some space between them.
- Bake for 10-12 minutes, watching until the edges are set but the centers remain slightly soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
