4 boneless, skinless chicken breasts

Salt and black pepper, to taste

1/2 cup all-purpose flour

2 large eggs

1 tbsp water

1/2 cup grated Romano cheese

1/2 cup grated Parmesan cheese

1 cup breadcrumbs (Italian-style or panko)

3 tbsp olive oil

2 tbsp butter

2 garlic cloves, minced

1/2 cup chicken broth

1/4 cup fresh lemon juice

1 tsp lemon zest

2 tbsp chopped parsley, for garnish

Lemon slices, for serving


Instructions

1. Pound chicken breasts to an even 1/2-inch thickness and season with salt and pepper.

2. Set up three shallow bowls: one with flour, one with beaten eggs and water, and one with a mix of Romano, Parmesan, and breadcrumbs.

3. Dredge each chicken breast first in flour, then in egg mixture, then in the breadcrumb-cheese mixture, pressing to adhere.

4. Heat olive oil and butter in a large skillet over medium-high heat.

5. Fry chicken cutlets for 3–4 minutes per side until golden brown and cooked through. Remove and keep warm.

6. In the same skillet, add garlic and sauté for 30 seconds until fragrant.

7. Add chicken broth and lemon juice, scraping any browned bits from the pan.

8. Simmer for 2–3 minutes, then stir in lemon zest.

9. Return chicken to the skillet to coat in the sauce briefly.

10. Sprinkle with chopped parsley and serve hot with lemon slices.

Notes

For extra crispiness, bake fried chicken at 400°F (200°C) for 5 minutes before serving.
