Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 12 oz. fettuccine pasta (or spaghetti, linguine, or penne)
  • Salt (for pasta water)
  • 4 tablespoons unsalted butter
  • 5 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/2 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • Fresh parsley (chopped)
  • Freshly ground black pepper
  • Grated Parmesan cheese
  • Crushed red pepper flakes
  • Lemon wedges

Instructions

  1. Season and cook the chicken: Season both sides of the chicken breasts with salt and pepper. Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add chicken breasts and cook for 5-7 minutes per side until golden brown. Remove from skillet and set aside.
  2. Cook the pasta: In a large pot, bring water to a boil, add salt, and cook fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
  3. Make the lemon butter garlic sauce: In the same skillet, melt 4 tablespoons of butter over medium heat. Sauté the minced garlic for 1 minute until fragrant. Stir in chicken broth, heavy cream, lemon juice, and lemon zest. Let it simmer for a couple of minutes.
  4. Combine chicken and pasta: Slice the cooked chicken and add it back to the skillet with the pasta. Toss to coat everything in the sauce, adjusting seasoning if necessary.

Notes

Serve with freshly chopped parsley and grated Parmesan cheese. Pair with a side salad or garlic bread.
