Description

Ingredients

  • 1 cup sugar cookie dough
  • 1/2 cup homemade lemon curd
  • 1 egg
  • 1/4 cup butter
  • 1 tablespoon lemon juice
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Roll the sugar cookie dough into small balls and press them into a mini muffin tin.
  3. Bake for 10-12 minutes until lightly golden.
  4. Allow to cool for a few minutes before filling.
  5. Fill each cookie cup with homemade lemon curd.
  6. Make the lemon curd by whisking together the egg, butter, lemon juice, and sugar over medium heat until thickened.
  7. Once filled, let the cups set for a few minutes.
  8. Dust with powdered sugar before serving.
