- 1 cup sugar cookie dough
- 1/2 cup homemade lemon curd
- 1 egg
- 1/4 cup butter
- 1 tablespoon lemon juice
- Powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C).
- Roll the sugar cookie dough into small balls and press them into a mini muffin tin.
- Bake for 10-12 minutes until lightly golden.
- Allow to cool for a few minutes before filling.
- Fill each cookie cup with homemade lemon curd.
- Make the lemon curd by whisking together the egg, butter, lemon juice, and sugar over medium heat until thickened.
- Once filled, let the cups set for a few minutes.
- Dust with powdered sugar before serving.
