Description

A delicious and creamy chicken skillet dish featuring cherry tomatoes and fresh basil, perfect for a keto diet.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat. The oil should shimmer but not smoke.
  2. Season the chicken breasts generously with salt and pepper. Add them to the skillet and cook until they’re browned and cooked through, about 6-7 minutes per side.
  3. Once cooked, remove the chicken from the skillet and set aside on a plate.
  4. In the same skillet, toss in the halved cherry tomatoes. Cook until they soften and release some of their juices, about 3-4 minutes.
  5. Pour in the heavy cream and bring everything to a gentle simmer.
  6. Add the shredded mozzarella cheese and stir until it melts and blends into a creamy sauce.
  7. Return the chicken to the skillet, covering it with the sauce, and sprinkle the chopped basil on top.
  8. Cook for an additional 2-3 minutes until everything heats through nicely.
  9. Serve hot and enjoy!

Notes

Serve with a garden salad or sautéed spinach for a nutritious boost. Can also be paired with cauliflower rice or zucchini noodles.
