- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup fresh basil, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat. The oil should shimmer but not smoke.
- Season the chicken breasts generously with salt and pepper. Add them to the skillet and cook until they’re browned and cooked through, about 6-7 minutes per side.
- Once cooked, remove the chicken from the skillet and set aside on a plate.
- In the same skillet, toss in the halved cherry tomatoes. Cook until they soften and release some of their juices, about 3-4 minutes.
- Pour in the heavy cream and bring everything to a gentle simmer.
- Add the shredded mozzarella cheese and stir until it melts and blends into a creamy sauce.
- Return the chicken to the skillet, covering it with the sauce, and sprinkle the chopped basil on top.
- Cook for an additional 2-3 minutes until everything heats through nicely.
- Serve hot and enjoy!
Notes
Serve with a garden salad or sautéed spinach for a nutritious boost. Can also be paired with cauliflower rice or zucchini noodles.
