Ingredients

- 4 oz smoked salmon
- 2 cups mixed greens
- 1/4 cup cherry tomatoes, halved
- 1/4 cucumber, sliced
- 2 tbsp capers
- 2 tbsp chives, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Combine the mixed greens, cherry tomatoes, cucumber, and capers in a large bowl and toss to distribute evenly.
- Flake the smoked salmon into bite-sized pieces and add it to the salad.
- Whisk together the olive oil, lemon juice, chopped chives, salt, and pepper in a small bowl to create the dressing.
- Drizzle the dressing over the salad and toss gently to combine.
