- 8 ounces cream cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup parmesan cheese
- 3 large eggs
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 pound ground beef
- 3/4 cup marinara sauce
- 1 1/2 cups ricotta cheese
- 1 1/2 cups mozzarella cheese, shredded
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the cream cheese, 2 cups of mozzarella cheese, parmesan, and eggs. Blend them carefully until you form a smooth keto noodle mix.
- Pour the mixture onto a baking sheet lined with parchment paper. Spread it out into a thin layer and bake for 15-20 minutes until it turns golden.
- While that’s baking, grab a skillet and sauté the chopped onion and minced garlic until they smell amazing!
- Add the ground beef to the skillet and cook it until it turns brown. Stir in the marinara sauce and simmer for a few minutes so the flavors can meld beautifully.
- Now comes the fun part—assembling the lasagna! In a baking dish, layer the keto noodles, then spread ricotta cheese, the meat mixture, and some more mozzarella cheese. Repeat the layers until you use everything up, making sure to top with the remaining mozzarella cheese.
- Bake the assembled lasagna for 25-30 minutes until it’s bubbling and golden on top.
