Description

A hearty and flavorful vegetarian lasagna packed with layers of fresh vegetables and cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. Heat olive oil in a pan and sauté zucchini, bell pepper, and mushrooms until tender.
  4. Add spinach and cook until wilted.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles, followed by 1/3 of the vegetable mixture, then 1/2 of the ricotta cheese, and a sprinkle of mozzarella.
  7. Repeat the layers two more times, finishing with marinara sauce and remaining mozzarella on top.
  8. Bake for 30-35 minutes until bubbly and golden.
  9. Let cool for 10 minutes before slicing.

Notes

For added flavor, you can include fresh herbs like basil or oregano.
