2 scotch bonnet peppers, seeded and minced

3 green onions, chopped

3 cloves garlic, minced

2 tablespoons brown sugar

2 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon olive oil

1 tablespoon ground allspice

1 teaspoon dried thyme

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

Salt and black pepper to taste

4 cups coleslaw mix

1 ripe mango, diced

1/2 red onion, thinly sliced

1/4 cup cilantro, chopped

1/2 cup sour cream

2 tablespoons honey

2 tablespoons lime juice

4 cups cooked rice

Lime wedges for serving


Instructions

1. Combine scotch bonnet peppers, green onions, garlic, brown sugar, soy sauce, lime juice, olive oil, allspice, thyme, cinnamon, nutmeg, salt, and pepper in a bowl.

2. Place chicken in zip-top bag with marinade, massage to coat evenly.

3. Refrigerate chicken for 30 minutes to 4 hours.

4. Preheat grill to medium-high heat and oil grates.

5. Remove chicken from marinade and grill 6-7 minutes per side.

6. Check internal temperature reaches 165°F with instant-read thermometer.

7. Let chicken rest 5 minutes, then slice into strips.

8. Mix coleslaw, diced mango, red onion, and cilantro in large bowl.

9. Whisk together sour cream, honey, and lime juice for cream sauce.

10. Divide cooked rice among serving bowls.

11. Top with sliced jerk chicken and mango slaw.

12. Drizzle with honey lime cream and serve with lime wedges.

Chicken thighs stay more moist than breasts during grilling.
