Description
Sweet, spicy, and perfectly glazed this Jalapeño Peach Chicken combines juicy seared chicken with a sticky peach-jalapeño sauce for a bold and flavorful dish that’s ready in under 40 minutes.
Ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tbsp olive oil
2 garlic cloves, minced
1–2 jalapeños, thinly sliced (adjust for spice level)
1 1/2 cups fresh or frozen peaches, diced
2 tbsp honey
2 tbsp apple cider vinegar
1 tbsp soy sauce
1/2 cup chicken broth
1 tsp cornstarch + 1 tbsp water (optional, for thickening)
Fresh basil or cilantro for garnish
Instructions
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes per side, or until golden brown and cooked through. Remove and keep warm.
3. In the same skillet, add garlic and sliced jalapeños. Sauté for 1 minute until fragrant.
4. Add diced peaches, honey, apple cider vinegar, soy sauce, and chicken broth. Stir to combine.
5. Simmer for 8–10 minutes, allowing peaches to soften and the sauce to reduce slightly.
6. If you prefer a thicker glaze, whisk cornstarch with water and stir into the sauce; cook another 1–2 minutes until thickened.
7. Return chicken to the pan, spoon sauce over the top, and simmer for 2–3 minutes to coat.
8. Serve hot, garnished with fresh basil or cilantro.
Notes
For extra heat, leave the jalapeño seeds in or add a dash of chili flakes.
Use canned peaches in juice if fresh ones aren’t available.
Pairs beautifully with jasmine rice, quinoa, or roasted vegetables.
