Description
Juicy pork meatballs served over creamy sweet potato mash and finished with a silky bourbon-maple sauce. A comforting, elevated dinner with warm fall flavors.
Ingredients
FOR THE MEATBALLS:
1 lb ground pork
1/2 cup breadcrumbs
1 egg
2 garlic cloves, minced
1/4 cup grated Parmesan
1/4 cup finely chopped parsley
1 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil (for searing)
FOR THE SWEET POTATO MASH:
2 large sweet potatoes, peeled and cubed
2 tbsp butter
1/4 cup milk or cream
1/4 tsp salt
1/4 tsp cinnamon (optional)
FOR THE BOURBON-MAPLE SAUCE:
2 tbsp butter
2 tbsp flour
1/2 cup bourbon
1/2 cup chicken broth
1/4 cup maple syrup
1 tbsp Dijon mustard
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Combine ground pork, breadcrumbs, egg, garlic, Parmesan, parsley, paprika, salt, and pepper. Mix gently until just combined.
2. Roll into 1–1.5 inch meatballs.
3. Heat olive oil in a skillet over medium heat and sear the meatballs until browned on all sides. Remove and set aside.
4. In the same skillet, melt butter for the sauce.
5. Whisk in flour and cook 1 minute.
6. Slowly add bourbon, scraping up browned bits.
7. Stir in chicken broth, maple syrup, Dijon, salt, and pepper.
8. Simmer 3–4 minutes until thickened.
9. Return meatballs to the skillet, spoon sauce over them, and simmer 10 minutes.
10. For the mash, boil sweet potatoes until tender.
11. Drain and mash with butter, milk, salt, and cinnamon if using.
12. Serve meatballs over sweet potato mash with extra bourbon-maple sauce drizzled on top.
Notes
Swap pork with turkey or chicken if preferred.
For a thicker sauce, simmer longer or add a bit more flour.
Add fresh thyme to the sauce for even more fall flavor.
Goes great with roasted Brussels sprouts or sautéed greens.
