Ingredients
2 cups all-purpose flour
1 packet (2 1/4 tsp) instant yeast
1 tsp salt
1 tsp sugar
3/4 cup warm water (about 110°F)
2 tbsp olive oil (plus extra for brushing)
2 cloves garlic, minced
1 tbsp fresh rosemary, chopped
Flaky salt for topping
Instructions
1. Preheat oven to 400°F (200°C) and lightly grease a 12-cup muffin pan.
2. In a mixing bowl, combine warm water, yeast, and sugar; let sit 5 minutes until foamy.
3. Stir in flour, salt, 1 tbsp olive oil, and mix until a sticky dough forms.
4. Divide dough evenly among muffin cups (about 2 tbsp each).
5. Cover and let rise for 20–25 minutes until puffy.
6. Mix remaining olive oil with minced garlic and rosemary, and brush over tops.
7. Sprinkle with flaky salt.
8. Bake for 15–18 minutes, until golden brown.
9. Cool slightly before serving warm.
Notes
Add shredded Parmesan or sun-dried tomatoes for extra flavor.
These muffins freeze beautifully — just reheat before serving.
