Ingredients
1 cup all-purpose flour
1/2 cup cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup semisweet chocolate chips
1/2 cup caramel bits or soft caramels, chopped
Flaky sea salt, for topping
Instructions
1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
3. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
4. Beat in the egg and vanilla extract until smooth.
5. Gradually mix in the dry ingredients until just combined.
6. Fold in chocolate chips and caramel bits.
7. Scoop dough into tablespoon-sized balls and place 2 inches apart on baking sheets.
8. Bake for 9–11 minutes, until edges are set but centers are soft.
9. Immediately sprinkle with flaky sea salt while warm.
10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Chill dough for 30 minutes before baking for thicker cookies.
Substitute caramel bits with chocolate-covered caramels for extra decadence.
Store cookies in an airtight container for up to 5 days or freeze up to 3 months.
