Juicy pan-seared chicken breasts smothered in a silky Irish whiskey cream sauce with garlic, Dijon, and thyme a rich, comforting dish perfect for special dinners or St. Patrick’s Day feasts.
Ingredients
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
Salt and black pepper, to taste
2 garlic cloves, minced
1/2 cup Irish whiskey (such as Jameson)
1 cup heavy cream
1 tbsp Dijon mustard
1 tsp fresh thyme leaves (or 1/2 tsp dried)
1/4 cup chicken broth
1 tsp brown sugar (optional, to balance flavor)
Fresh parsley, for garnish
Instructions
1. Season chicken breasts generously with salt and pepper.
2. Heat olive oil and butter in a large skillet over medium-high heat.
3. Sear chicken for 5–6 minutes per side until golden and cooked through. Transfer to a plate.
4. Reduce heat to medium, then add minced garlic to the pan and cook for 30 seconds.
5. Carefully pour in whiskey (off the heat briefly if using gas stove). Let it simmer for 1–2 minutes to cook off the alcohol.
6. Stir in chicken broth, Dijon mustard, thyme, and optional brown sugar.
7. Pour in heavy cream and stir until smooth.
8. Simmer for 3–5 minutes until the sauce thickens slightly.
9. Return chicken to the skillet, coating with sauce and warming through.
10. Garnish with chopped parsley and serve immediately.
Notes
Serve with mashed potatoes, roasted vegetables, or buttered noodles.
For a lighter sauce, use half-and-half instead of heavy cream.
Add sautéed mushrooms or onions for an extra layer of flavor.
