Ingredients
8 oz high-quality dark chocolate (60-70% cocoa), chopped
6 large eggs, separated and at room temperature
1/3 cup granulated sugar, divided
2 tablespoons unsalted butter, softened
1 teaspoon pure vanilla extract
1/4 teaspoon fine sea salt
2 tablespoons strong coffee or espresso, cooled
Instructions
1. Separate eggs and bring to room temperature.
2. Melt chocolate in double boiler until smooth.
3. Remove from heat, whisk in butter, vanilla, salt, and coffee.
4. Allow chocolate mixture to cool slightly.
5. Whip egg whites with half the sugar until soft peaks form.
6. Beat egg yolks with remaining sugar until pale and ribbony.
7. Fold one-third of whites into chocolate base to lighten.
8. Gently fold in remaining whites in two additions.
9. Transfer to serving glasses and refrigerate 4+ hours.
Notes
Use room temperature eggs for best volume.
Don’t overheat chocolate to avoid graininess.
Fold gently to maintain airy texture.
Store covered up to 4 days refrigerated.
