**For the chicken:**

1 lb boneless, skinless chicken breasts

1 tbsp olive oil

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp cumin

1/4 tsp cayenne pepper

Salt and black pepper to taste

**For the street corn mix:**

3 cups corn kernels (fresh, frozen, or canned)

1 tbsp butter

1/4 cup mayonnaise

1/4 cup sour cream or Greek yogurt

1/2 cup cotija cheese (or feta), crumbled

1 jalapeño, finely chopped

1/2 tsp chili powder

Juice of 1 lime

2 tbsp fresh cilantro, chopped

**For the lime crema:**

1/4 cup sour cream or Greek yogurt

1 tbsp lime juice

1/2 tsp honey

Pinch of chili powder and salt

**For serving:**

2 cups cooked rice or quinoa

1 avocado, sliced

Extra cilantro and cotija cheese for garnish

Lime wedges


Instructions

1. In a bowl, whisk olive oil, chili powder, smoked paprika, garlic powder, cumin, cayenne, salt, and pepper. Add chicken and toss to coat. Let marinate 15–30 minutes.

2. Heat a grill pan or skillet over medium-high heat. Cook chicken 5–6 minutes per side, or until golden and cooked through (internal temperature 165°F). Let rest, then slice.

3. In a large skillet, melt butter over medium heat. Add corn and cook 5–7 minutes until lightly charred.

4. Remove from heat and stir in mayonnaise, sour cream, cotija cheese, jalapeño, chili powder, lime juice, and cilantro. Mix well.

5. In a small bowl, whisk together sour cream, lime juice, honey, chili powder, and salt for the lime crema.

6. Assemble the bowls: layer rice or quinoa on the bottom, then top with sliced chicken and street corn mix.
