Description

One-Pot Mushroom Rice fluffy, savory rice infused with rich mushroom flavor, garlic, and herbs. An easy, comforting side dish (or main) made entirely in one pot with minimal effort and maximum flavor.


Ingredients

2 tbsp olive oil

1 tbsp butter

10 oz (280g) cremini or button mushrooms, sliced

1 small onion, finely diced

3 garlic cloves, minced

1 cup long-grain white rice (or basmati)

2 cups vegetable or chicken broth

1 tsp soy sauce (for umami)

1/2 tsp dried thyme (or 1 tsp fresh)

Salt and black pepper, to taste

2 tbsp fresh parsley, chopped (for garnish)

Optional: 1/4 cup grated Parmesan cheese


Instructions

1. Heat olive oil and butter in a large skillet or pot over medium heat.

2. Add sliced mushrooms and cook for 6–8 minutes until browned and their moisture has evaporated.

3. Add diced onion and sauté for 3–4 minutes until softened.

4. Stir in garlic and cook for 30 seconds until fragrant.

5. Add rice and stir for 1 minute to lightly toast the grains.

6. Pour in broth, soy sauce, thyme, salt, and pepper. Stir to combine.

7. Bring to a boil, then reduce heat to low. Cover and simmer for 15–18 minutes, until rice is tender and liquid is absorbed.

8. Remove from heat and let sit, covered, for 5 minutes.

9. Fluff with a fork, stir in fresh parsley (and Parmesan, if using), and serve warm.

Notes

Use brown rice, but increase cooking time to 35–40 minutes and add more broth if needed.

Add peas, spinach, or cooked chicken to make it a full meal.

For deeper flavor, use a mix of mushrooms like shiitake, oyster, and cremini.

Leftovers reheat beautifully — add a splash of broth or butter to bring it back to life.
