Ingredients
1 flatbread or naan
1 cup fresh cranberries
1 tbsp olive oil
1 tbsp honey
4 oz goat cheese, softened
2 tbsp cream cheese (optional, for extra creaminess)
1 tsp fresh thyme or rosemary
Salt and pepper to taste
2 tsp balsamic glaze or reduction
Additional honey for drizzling
Chopped pistachios or walnuts (optional)
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Toss cranberries with olive oil, honey, salt, and pepper. Spread on the baking sheet and roast for 10–12 minutes until they begin to burst.
3. Spread the flatbread with softened goat cheese (mix with cream cheese if using).
4. Top with roasted cranberries and sprinkle with thyme or rosemary.
5. Bake for 6–8 minutes until edges are golden and cheese is warm.
6. Remove from oven and drizzle with balsamic glaze and honey.
7. Top with chopped pistachios or walnuts if desired.
8. Slice and serve warm.
Notes
Use naan or pre-baked pizza crust for a quick base.
Add caramelized onions for a deeper flavor.
