3 tbsp olive oil

3 garlic cloves, minced

2 tsp ground cumin

2 tsp paprika

1 tsp ground coriander

1 tsp turmeric

1/2 tsp cinnamon

1/2 tsp cayenne pepper (optional)

1 tsp salt

1/2 tsp black pepper

Juice of 1 lemon

For the Garlic Sauce:

1/2 cup mayonnaise

2 tbsp plain Greek yogurt

3 garlic cloves, finely grated

1 tbsp lemon juice

1 tbsp olive oil

Salt to taste

For Serving:

Pita bread or rice

Sliced cucumbers, tomatoes, and lettuce

Fresh parsley or mint


Instructions

1. In a large bowl, combine olive oil, minced garlic, cumin, paprika, coriander, turmeric, cinnamon, cayenne, salt, pepper, and lemon juice to make the marinade.

2. Add chicken thighs and toss to coat evenly. Cover and marinate for at least 1 hour (or up to overnight for best flavor).

3. Preheat a grill pan or skillet over medium-high heat.

4. Cook chicken for 5–6 minutes per side, until nicely charred and cooked through (internal temp 165°F).
