Description
A warm, comforting beef and vegetable soup packed with tender chunks of beef, hearty potatoes, carrots, and celery. Perfect for chilly days and cozy dinners.
Ingredients
1 lb beef stew meat, cut into small cubes
1 tbsp olive oil
1 onion, diced
3 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
2 potatoes, peeled and diced
1 cup green beans, chopped
1 can (14.5 oz) diced tomatoes
6 cups beef broth
1 tsp dried thyme
1 tsp dried oregano
1 bay leaf
Salt and pepper to taste
Fresh parsley, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
2. Add onions and garlic; cook until softened.
3. Stir in carrots, celery, potatoes, and green beans.
4. Pour in beef broth and diced tomatoes.
5. Add thyme, oregano, bay leaf, salt, and pepper.
6. Bring to a boil, then reduce heat, cover, and simmer for 1–1.5 hours until beef is tender.
7. Remove bay leaf and adjust seasoning.
8. Garnish with fresh parsley and serve warm.
Notes
For richer flavor, sear the beef in small batches.
Add corn or peas during the last 10 minutes of cooking for extra color.
This soup freezes beautifully for up to 3 months.
