Ingredients
8 ounces brie cheese, chilled
1 cup shelled pistachios, finely chopped
1/2 cup panko breadcrumbs
1/3 cup all-purpose flour
2 large eggs, beaten
1/4 teaspoon garlic powder
1/4 teaspoon dried thyme
1/4 teaspoon salt
Pinch of black pepper
2 tablespoons honey for drizzling
Fresh thyme leaves for garnish
Cooking spray or vegetable oil for baking
Instructions
1. Place the brie wheel in the freezer for 15 minutes to firm up for easier cutting.
2. Set up three shallow bowls for breading: place flour in the first bowl, beaten eggs in the second bowl, and combine chopped pistachios, panko breadcrumbs, garlic powder, dried thyme, salt, and black pepper in the third bowl.
3. Remove brie from freezer and cut into 1-inch cubes using a sharp knife. Pat each cube dry with paper towels.
4. Preheat oven to 375°F and line a baking sheet with parchment paper.
5. Working with one brie cube at a time, coat it first in flour, shaking off excess. Dip into beaten egg, allowing excess to drip off. Press firmly into the pistachio-panko mixture, coating all sides completely.
6. Place breaded bites on the prepared baking sheet, spacing them 2 inches apart. For extra crunch, repeat the egg and pistachio coating steps for a double layer.
7. Lightly spray the breaded bites with cooking spray or brush with a small amount of vegetable oil.
8. Bake for 12-15 minutes until the coating is golden brown and the cheese feels soft when gently pressed. The pistachios should be toasted and fragrant.
9. Remove from oven and let rest for 2-3 minutes before transferring to a serving platter.
10. Drizzle with honey, garnish with fresh thyme leaves, and serve immediately with crackers or baguette slices.
Notes
For best results, keep the brie very cold during breading to prevent melting and ensure a crispy coating.
To make ahead, freeze unbaked breaded bites on a baking sheet, then transfer to freezer bags for up to 1 month. Bake directly from frozen, adding 3-5 minutes to the cooking time.
Alternative frying method: Heat 2 inches of vegetable oil to 350°F and fry bites for 2-3 minutes until golden, then drain on paper towels.
The cheese will continue to melt slightly after removing from the oven, so avoid overbaking.
