Description
A cozy, creamy, and flavorful Instant Pot White Chicken Chili made with tender chicken, white beans, green chiles, and warm spices. A hearty one-pot meal ready in under 30 minutes!
Ingredients
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 lb boneless skinless chicken breasts
2 cans (15 oz) great northern beans, drained and rinsed
1 can (4 oz) diced green chiles
1 1/2 cups chicken broth
1 tsp cumin
1 tsp chili powder
1/2 tsp oregano
1/2 tsp salt
1/4 tsp black pepper
1/2 cup sour cream
1/2 cup cream cheese, softened
Juice of 1 lime
Fresh cilantro, for garnish
Instructions
1. Set Instant Pot to sauté mode and heat olive oil.
2. Add diced onion and sauté until softened. Stir in garlic.
3. Add chicken breasts, beans, green chiles, broth, cumin, chili powder, oregano, salt, and pepper.
4. Seal lid and cook on high pressure for 12 minutes.
5. Quick release pressure.
6. Remove chicken, shred it, and return it to the pot.
7. Stir in sour cream, cream cheese, and lime juice until melted and creamy.
8. Taste and adjust seasoning. Garnish with cilantro and serve.
Notes
For extra heat, add jalapeños or use hot green chiles.
Swap chicken breasts for thighs for richer flavor.
Great served with tortilla chips, avocado, or shredded cheese.
