Ingredients
— Chicken —
2 large chicken breasts (about 1 lb total)
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
— Whipped Feta —
1/2 cup crumbled feta cheese
2 tbsp Greek yogurt or cream cheese
1 tsp lemon juice
1/2 tsp honey (optional, for balance)
— Hot Honey —
3 tbsp honey
1–2 tsp hot sauce (such as sriracha or chili flakes to taste)
1/4 tsp red pepper flakes (optional)
Fresh herbs (parsley or thyme) for garnish
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Pat chicken dry and rub with olive oil, paprika, garlic powder, salt, and pepper.
3. Place on the baking sheet and bake 20–25 minutes, until chicken reaches 165°F (74°C).
4. Meanwhile, in a small food processor or bowl, blend feta, yogurt, and lemon juice until smooth and creamy.
5. In a small saucepan, gently heat honey with hot sauce and red pepper flakes until warm and slightly thin.
6. Once chicken is done, top each piece with a generous spoonful of whipped feta and drizzle with hot honey.
7. Garnish with fresh herbs and serve immediately.
Notes
For extra flavor, marinate chicken in a bit of olive oil, lemon juice, and garlic for 30 minutes before baking.
Try serving over couscous, quinoa, or roasted vegetables for a complete meal.
