Ingredients
2 lbs carrots, peeled and cut into sticks or diagonally sliced
2 tbsp olive oil
1 1/2 tbsp honey
1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
1/2 tsp salt
1/4 tsp black pepper
Optional garnish: extra thyme or a sprinkle of sea salt
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss carrots with olive oil, honey, thyme, salt, and pepper.
3. Spread evenly on the baking sheet in a single layer.
4. Roast for 25–30 minutes, stirring halfway through, until golden and caramelized.
5. Remove from oven, garnish with fresh thyme, and serve warm.
Notes
For a savory twist, add a drizzle of balsamic vinegar before roasting.
Use rainbow carrots for a colorful presentation.
