- 4 pieces Boneless, Skinless Chicken Breasts
- 3 tablespoons Honey
- 2 tablespoons Lime Juice
- 1 tablespoon Lime Zest
- 2 tablespoons Olive Oil
- 2 cloves Garlic, minced
- 1 teaspoon Cumin
- 1 teaspoon Smoked Paprika
- Salt to taste
- Pepper to taste
- 2 cups Cooked Jasmine or Basmati Rice
- 1 medium Ripe Avocado
- 1 tablespoon Extra Lime Juice
- 1 tablespoon Olive Oil
- Fresh Cilantro or Parsley to taste
- Chili Flakes to taste
- 1 tablespoon Toasted Sesame Seeds
Instructions
- In a mixing bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, cumin, smoked paprika, salt, and pepper. Add the chicken breasts and coat them thoroughly. Let it marinate for about 15 minutes.
- Cook the jasmine or basmati rice according to package instructions.
- Heat a large skillet over medium-high heat and add olive oil. Once hot, add the marinated chicken and cook for about 5-7 minutes on each side until golden brown and cooked through (165°F).
- While the chicken cooks, slice the ripe avocado, remove the pit, and chop it into pieces. Drizzle with extra lime juice and olive oil, and season with salt and pepper.
- Once the chicken is cooked, let it rest for a few minutes, then slice it into strips. Serve rice on plates topped with chicken and diced avocado, garnished with fresh cilantro or parsley, chili flakes, and toasted sesame seeds.
Notes
For a vegetarian option, substitute chicken with grilled halloumi cheese or marinated tofu.
