Ingredients

  • 1 pound carrots, peeled and sliced
  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sliced carrots and trimmed green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until everything is evenly coated.
  3. Spread the veggies in a single layer on a baking sheet. Make sure they are well spaced to ensure even roasting.
  4. Roast for 20-25 minutes or until the carrots are tender and slightly caramelized, and the green beans are tender-crisp. Stir the vegetables halfway through cooking for even roasting.
  5. Remove from the oven and transfer to a serving dish.
  6. Garnish with chopped fresh parsley.
  7. Serve immediately and enjoy!
