- 1 lb Carrots
- 2 tbsp Olive oil
- 3 tbsp Honey
- 3 cloves Garlic, minced
- 1 tsp Dried dill or fresh dill
- 1/2 cup Feta cheese, crumbled
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cut the carrots into even-sized pieces.
- Toss the carrots with olive oil, honey, minced garlic, dill, salt, and black pepper in a bowl.
- Spread the carrots on a baking sheet in a single layer.
- Roast in the oven for 20-25 minutes, stirring halfway through.
- Remove from the oven and sprinkle with feta cheese before serving.
Notes
For extra flavor, add fresh parsley or drizzle additional honey before serving.
