Ingredients

  • 2 tbsp Olive oil
  • 3 tbsp Honey
  • 3 cloves Garlic, minced
  • 1 tsp Dried dill or fresh dill
  • 1/2 cup Feta cheese, crumbled
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut the carrots into even-sized pieces.
  3. Toss the carrots with olive oil, honey, minced garlic, dill, salt, and black pepper in a bowl.
  4. Spread the carrots on a baking sheet in a single layer.
  5. Roast in the oven for 20-25 minutes, stirring halfway through.
  6. Remove from the oven and sprinkle with feta cheese before serving.

Notes

For extra flavor, add fresh parsley or drizzle additional honey before serving.
