Ingredients

  • 2 cups rolled oats
  • 1 cup nuts (almonds, walnuts, or pecans)
  • 1/2 cup seeds (pumpkin or sunflower)
  • 1/2 cup honey or maple syrup
  • 1/4 cup olive oil or coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup dried fruit (raisins, cranberries, or apricots) – optional

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rolled oats, nuts, seeds, cinnamon, and salt in a large bowl; mix well.
  3. Mix the honey or maple syrup, oil, and vanilla extract in a separate bowl.
  4. Pour the wet mixture over the dry ingredients and stir until everything is well coated.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, stirring halfway through, until golden brown.
  7. Remove from the oven and let it cool completely.
  8. Stir in dried fruit if using.
  9. Store in an airtight container and enjoy.
