- 4 boneless, skinless chicken breasts
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1/2 cup Parmesan cheese, grated
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Place chicken breasts in the crockpot.
- Mix together the heavy cream, chicken broth, sun-dried tomatoes, Parmesan cheese, garlic, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken in the crockpot.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Add fresh spinach in the last 30 minutes and stir.
- Serve warm and enjoy!
Notes
Serve over rice or mashed potatoes to soak up the sauce. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for 2-3 months.
