Instructions
- Mix the shredded chicken, Greek yogurt, Laughing Cow cheese, and ranch seasoning until well combined.
- Spread the mixture on one half of the low-carb tortilla.
- Fold the tortilla in half to cover the filling.
- Heat a non-stick skillet over medium heat and coat it with cooking spray or olive oil.
- Cook the quesadilla for about 3-4 minutes on each side, until golden brown and the cheese is melted.
- Remove from skillet, slice into wedges, and serve warm.
