Ingredients
1 cup green or brown lentils, rinsed
2 large yellow onions, thinly sliced
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried thyme
1 bay leaf
3 cups vegetable broth
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
1. Heat olive oil in large pot over medium heat
2. Add sliced onions, cook 15-20 minutes until golden and caramelized
3. Stir in minced garlic, thyme, and bay leaf, cook 1 minute until fragrant
4. Add rinsed lentils and vegetable broth to pot
5. Bring mixture to a boil, then reduce heat to low
